    Prepare the Potatoes

    Preheat the oven to 200°C (400°F). Toss the baby potatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for 25-30 minutes or until golden brown and tender.

    Blanch the Green Beans

    While the potatoes are roasting, bring a pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until bright green and tender-crisp. Drain and set aside.

    Sear the Salmon

    Heat a large skillet over medium-high heat. Add olive oil. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and sear for about 4-5 minutes. Flip and cook for an additional 3-4 minutes, or until cooked through.

    Make the Honey Glaze

    In the same skillet, lower the heat and add butter, minced garlic, honey, and lemon juice. Stir to combine and let it simmer for 1-2 minutes until slightly thickened.

    Serve

    Plate the roasted potatoes and green beans. Place the seared salmon on top and drizzle with the buttery honey glaze before serving.
