Prepare the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks, lemon juice, salt, and white pepper. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Gradually whisk in melted butter until the sauce thickens. Remove from heat and set aside.

Poach the Eggs
In a large pot, bring water to a gentle simmer. Crack each egg into a small bowl, then gently slide it into the simmering water. Cook for about 3-4 minutes for a runny yolk or longer for firmer yolks. Remove with a slotted spoon and drain on paper towels.

Toast the Muffins
Split the English muffins and toast them until golden brown.

Place a slice of ham on each toasted muffin half. Top with a poached egg, then drizzle generously with Hollandaise sauce. Serve immediately.
