Method

Preparing the Calamari

    Coat the Calamari

    In a large bowl, mix the flour, cornstarch, salt, and black pepper. Dredge the calamari rings in the mixture until well coated.

    Fry the Calamari

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat. Once hot, fry the calamari in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Making the Lemon Garlic Butter Sauce

    Prepare the Sauce

    In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Stir in the lemon juice and hot peppers or Thai chili. Cook for another minute.

Making the Thai Chili Glaze

    Combine the Glaze

    In a small saucepan, heat the Thai chili sauce over low heat until warm. Remove from heat and set aside.

Serving

    Plate the Dish

    Serve the fried calamari immediately. For the Lemon Garlic Butter version, drizzle with the butter sauce and sprinkle with fresh parsley. For the Thai Chili version, drizzle the warm sauce over the calamari, top with chopped roasted peanuts, and garnish with crispy arugula.
