    Prepare the Homefries

    Dice the potatoes, bell pepper, and onion. Heat olive oil in a skillet over medium heat, add the potatoes, and season with salt and pepper. Cook, stirring occasionally, until golden and tender, about 10-15 minutes. Add the bell pepper and onion, and cook for an additional 5 minutes until softened.

    Cook the Ribeye

    While the homefries are cooking, season the ribeye steak with salt and pepper. In a separate pan, heat a little olive oil over medium-high heat. Add the ribeye steak and cook for 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest for a few minutes before slicing.

    Fry the Eggs

    In the same pan used for the ribeye, add butter and heat over medium. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.

    Toast the bread slices in a toaster or on a skillet until golden brown.

    Plate the sliced ribeye, add a serving of homefries, top with the fried eggs, and serve with toasted bread on the side.
