House-Made Granola
Preheat and prepare
Preheat oven to 325°F (160°C). Line a rimmed baking sheet with parchment paper.
Mix dry ingredients
In a large bowl combine 2 cups rolled oats, 1 cup chopped almonds, 1 tablespoon shredded coconut (if using), 1/4 cup pumpkin seeds, 1 tablespoon brown sugar, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon salt. Stir until evenly distributed.
Add wet ingredients
Whisk together 3 tablespoons maple syrup and 2 tablespoons oil in a small bowl. Pour over the dry mixture and stir until the oats and nuts are evenly coated.
Bake the granola
Spread the mixture in an even layer on the prepared baking sheet. Bake for 18–22 minutes, stirring once halfway through, until golden and fragrant. Watch closely the last 5 minutes to prevent burning.
Cool and store
Remove from oven and let the granola cool completely on the baking sheet; it will crisp as it cools. Break into clusters and store in an airtight container for up to 2 weeks.
Parfait Assembly
Sweeten the yogurt
In a medium bowl, stir together 3 cups plain Greek yogurt, 4 tablespoons honey, and 1 teaspoon vanilla extract until smooth and slightly glossy. Taste and add more honey if you prefer it sweeter.
Prepare fruit
Wash the berries and drain well. Hull and quarter the strawberries, slice the banana and kiwi, and have blueberries ready. Pat fruit dry with paper towel to avoid watering down the parfait.
Layer the parfaits
For 4 servings, use 4 clear glasses or bowls. Start with about 3 tablespoons of granola in the bottom of each glass, then add about 1/3 cup of the honeyed yogurt, followed by a spoonful of mixed fruit (about 2 tablespoons). Repeat one more layer: 3 tablespoons granola, 1/3 cup yogurt, and top with remaining fruit.
Finish and garnish
Drizzle about 1 teaspoon honey over each parfait and sprinkle a final tablespoon of granola on top. Garnish with a few mint leaves if desired.
Serve or chill
Serve immediately for maximum crunch. If preparing ahead, assemble without the top granola (store granola separately) and keep refrigerated up to 6 hours; add remaining granola just before serving.
