Dose and Tamp

Weigh 18 g of finely ground espresso coffee and distribute evenly in the portafilter. Tamp with about 30 lb (13.6 kg) of pressure to create a level puck.

Pull the shot

Lock the portafilter into a preheated espresso machine and start extraction. Aim for a 40 ml espresso (double shot) in about 25–30 seconds. Adjust grind size if extraction is significantly faster or slower.

Preheat a 240–300 ml cup by rinsing with hot water, then discard the rinse water.

Pour 120 ml of hot water into the preheated cup.

Pour the freshly extracted 40 ml espresso slowly over the hot water. Pouring the espresso over the water (hot water first) preserves crema and gives a smoother texture; some prefer pouring water over espresso—either is acceptable.

Taste and adjust. Add sugar/sweetener or milk/cream to taste if desired.

Serve immediately while hot. Provide a spoon if sugar or milk will be added.
