Ensure your espresso machine (or stovetop espresso maker) is warmed up. Have a portafilter, tamper, steam wand (or separate milk frother), a 160–180 ml metal steaming pitcher, and a 180–220 ml cappuccino cup ready and pre-warmed with hot water then emptied.
If using whole beans, dose 18 g of beans and grind to a fine espresso grind just before brewing.
Brew the Espresso
Tamping and extraction
Dose 18 g of finely ground coffee into the portafilter basket. Distribute evenly, level, and tamp with about 30 pounds (13–15 kg) of pressure to create a smooth puck. Lock the portafilter into the machine and start extraction immediately. Aim for a 36 ml espresso shot (single long/ristretto-adjusted shot) in about 25–30 seconds. Adjust grind or dose if extraction time is significantly off.
If using a stovetop maker, brew according to manufacturer instructions to yield approximately 36 ml of strong brewed espresso-style coffee.
Steam and Texturize Milk
Positioning the steam wand
Purge the steam wand for 1–2 seconds to remove condensation. Insert the tip of the steam wand just below the milk surface at a slight angle, near the pitcher wall, so it creates a steady, gentle whirlpool when steaming.
Stretching (aeration) and heating
Turn on steam to full. For the first 3–6 seconds, keep the tip just below the surface to introduce microfoam (a soft hissing sound). You want to add about 10–20% volume in microfoam for a cappuccino. After initial aeration, lower the wand slightly deeper to heat the milk and maintain a whirlpool for even texture. Stop steaming when pitcher side is hot to the touch (about 60–65°C / 140–150°F). Do not overheat.
Polish milk
Turn off steam, wipe the wand with a damp cloth and purge again. Tap the pitcher briefly on the counter and swirl to break any large bubbles and polish the milk into a glossy, velvety microfoam suitable for a cappuccino.
Assemble Cappuccino
Pour espresso
Pour the freshly extracted 36 ml espresso into the pre-warmed cappuccino cup.
Add milk and foam
Hold the pitcher about 2–3 cm above the cup and begin pouring the steamed milk steadily into the center of the espresso to combine. As the cup fills, bring the pitcher slightly closer to let the microfoam flow on top. Aim for a balance of roughly 1/3 espresso, 1/3 steamed milk, and 1/3 foam — total beverage volume ~180–200 ml including foam.
Finish and garnish
If desired, dust the top with a light sprinkle of cocoa powder or ground cinnamon (about 1 tsp). If you want latte art, use the final pours to create a simple heart or rosette.
Serve
Serve immediately while hot. Provide a saucer and spoon. Enjoy within a few minutes for best texture and flavor.
