Method
Prepare Bacon & Toast
Cook bacon
Place a medium nonstick or cast-iron skillet over medium heat. Add the bacon strips in a single layer. Cook 3–4 minutes per side, adjusting heat to render fat slowly so bacon crisps but doesn't burn. Total cook time should be about 8–10 minutes depending on thickness. Transfer bacon to a paper-towel-lined plate and reserve 1 teaspoon of bacon fat in the pan (discard excess or reserve for another use).
Toast sourdough
While bacon rests, spread 1/2 tablespoon of butter on one side of each sourdough slice. Heat a separate clean skillet over medium-low (or use a toaster). Place bread, buttered side down, and toast until golden and crisp, about 2–3 minutes. If using skillet, press lightly and flip to toast the other side 1 minute. Remove and keep warm.

Fry the egg
In the skillet with reserved bacon fat (add the 1 teaspoon olive oil if pan looks dry) heat over medium-low. Crack the egg into a small bowl to check for shells, then gently slide into the pan. Season lightly with 1/4 teaspoon salt and 1/8 teaspoon black pepper. For a runny yolk (recommended), cook undisturbed until whites are set but yolk still jiggles, 2.5–3 minutes. For slightly firmer yolk, cover pan with a lid for 20–30 seconds. Remove egg with a spatula and set on a plate.
Assemble Arugula
Dress arugula
Toss the 1 cup arugula with the remaining 1/4 teaspoon salt, remaining 1/4 teaspoon black pepper, 1/2 teaspoon lemon juice and a light pinch (about 1/8 teaspoon) of red pepper flakes if using. This brightens the greens and balances the preserves' sweetness.
Build Sandwich
Spread 1 tablespoon of raspberry preserves evenly over the top side of one toasted sourdough slice. If you prefer less sweetness, use 1/2 tablespoon instead.
Close the sandwich with the preserves-covered slice, preserves side down, and press gently to settle components. If desired, cut the sandwich in half on the diagonal and serve immediately while egg is warm and yolk still runny.
Serving Suggestion
Serve the sandwich hot. Optional: serve with extra raspberry preserves on the side and a few extra arugula leaves for garnish.
