Season
Pat the pork pieces dry with paper towels. In a bowl, combine kosher salt, black pepper, ground cumin, and dried oregano. Rub the spice mix evenly over the pork pieces.
Brown
Heat 1 tablespoon vegetable oil in a large heavy skillet or Dutch oven over medium-high heat. When hot, add pork in a single layer (work in batches if needed) and brown on all sides, about 6–8 minutes total. Transfer browned pork to a plate.
Braise
Reduce heat to medium. Add minced garlic and the quartered yellow onion to the pot and sauté 1–2 minutes until fragrant. Return pork to the pot, add bay leaf, chicken or pork stock, orange juice, and 1 tablespoon fresh lime juice. Bring to a simmer, then reduce heat to low, cover partially, and simmer gently until pork is very tender, 1.5 to 2 hours. Check occasionally and add a few tablespoons of water if liquid evaporates too quickly.
Shred & crisp
When pork is fork-tender, remove it from the braising liquid and shred with two forks. If desired, heat a large skillet over medium-high heat, add 1–2 teaspoons oil, and sear shredded pork in batches until edges are crisped, about 3–5 minutes per batch. Season to taste with a pinch more salt and a squeeze of lime if needed.
Quick salsa verde (optional)
Place rinsed tomatillos, jalapeño, and garlic in a small saucepan and cover with water. Bring to a boil, then simmer 4–5 minutes until tomatillos soften. Drain and transfer to a blender with cilantro, lime juice, and 1/2 teaspoon salt. Blend until smooth. Adjust salt and heat to taste. Keep chilled or at room temperature until serving.

Warm tortillas
Warm a dry cast-iron skillet or comal over medium-high heat until hot. Lightly brush each corn tortilla with a little vegetable oil (about 1/2 teaspoon per tortilla) and warm 20–30 seconds per side until pliable and slightly charred in spots. Alternatively, steam stacked tortillas wrapped in foil for 10 minutes.
Assemble tacos
Divide shredded pork among 9 warmed corn tortillas (3 tacos per serving; total servings = 3). Top each taco with a small spoonful of diced white onion, chopped cilantro, crumbled queso fresco, and a drizzle of salsa verde or hot sauce. Add pickled red onion and sliced radishes if using. Serve with lime wedges.
