Measure and mix

In a jar or bowl with a lid (about 16 oz capacity), add 1 cup rolled oats, 1 cup oat milk, and 1/2 cup plain yogurt if using. Stir to combine until the oats are evenly moistened.

Add sweetener and flavor

Add 1 tablespoon honey, 1/4 teaspoon vanilla extract, 1/8 teaspoon ground cinnamon and a pinch of salt. Stir well to distribute the honey and spices throughout the oat mixture.

Chill and hydrate

Cover the jar or bowl with a lid or plastic wrap. Refrigerate for at least 6 hours, preferably overnight (8–10 hours). The oats will absorb the liquid and soften to a creamy consistency.

If you prefer a thinner consistency, stir in an additional 1–2 tablespoons oat milk after chilling.

Assemble and serve

Remove the overnight oats from the refrigerator. Give the mixture a good stir to loosen it.

Top with fresh fruit: 1/2 cup sliced strawberries, 1/2 banana sliced, and 1/4 cup blueberries. Sprinkle 1 tablespoon toasted nuts or seeds if desired.

Drizzle additional honey to taste if you like it sweeter (about 1 teaspoon). Serve chilled.
