Prepare bread and spreads

Split the cracked wheat rolls horizontally. Lightly toast the cut sides in a toaster or under a broiler for 1–2 minutes until just golden. Spread 1 teaspoon mayonnaise on the bottom half of each roll and 1/2 teaspoon yellow mustard on the top half.

Assemble cheese and produce

Place two slices of sharp cheddar on the bottom half of each toasted roll. Top the cheese with two dill pickle slices, 1 tablespoon thinly sliced red onion, one tomato slice (if using), and one lettuce leaf. Sprinkle each sandwich with 1/8 teaspoon salt and a pinch (about 1/16 tsp) of black pepper over the tomato/lettuce to season.

Finish and serve (cold)

Close sandwiches with the top roll halves. Serve immediately for a classic cheddar-on-cracked-wheat sandwich that highlights the sharp cheese and crunchy pickles.

Pan-grill for melted cheddar

If you prefer the cheddar melted and the roll slightly crisped, heat a skillet over medium-low. Brush the outside top and bottom of each sandwich with a mix of 1 tsp olive oil and 1 tsp butter (or just butter). Place sandwich in the skillet and cook 2–3 minutes per side, pressing gently with a spatula, until the cheese is melted and the bread is golden-brown. Transfer to a cutting board, slice in half, and serve warm.
