Cook the Apricot Filling
In a medium saucepan, combine the chopped dried apricots, water, honey, lemon juice, and cinnamon. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10-15 minutes until the apricots are soft and the mixture is slightly thickened. Stir occasionally. Once done, remove from heat and let it cool.

Mix Dry Ingredients
In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Mix well to ensure all dry ingredients are evenly distributed.

Add Butter
Pour the melted unsalted butter into the dry ingredients and mix until the mixture is crumbly and well combined.
Assemble and Bake

Preheat the Oven
Preheat your oven to 350°F (175°C).

Prepare the Baking Pan
Line a 9x13 inch baking dish with parchment paper, leaving some overhang to make it easier to lift the bars out later.

Press half of the oat mixture evenly into the bottom of the prepared baking dish. Spread the apricot filling over the base in an even layer. Sprinkle the remaining oat mixture over the apricot filling, pressing down lightly.

Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown.

Remove from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper to lift the bars out of the pan and let them cool completely on a wire rack. Once cooled, cut into squares or bars and serve.
