Prepare the Adzuki Beans
Rinse the adzuki beans under cold water, then soak them in water overnight. Drain and rinse again, then cook in a pot with fresh water until tender, approximately 45 minutes. Allow to cool.

Prepare the Dates
Soak the pitted dates in warm water for about 10 minutes to soften. Drain and set aside.
Mixing

Blend the Base Ingredients
In a food processor, combine the cooked adzuki beans, soaked dates, almond flour, cocoa powder, baking powder, and salt. Blend until smooth.

Add Wet Ingredients
Add the vanilla extract and almond milk to the blended mixture. Blend again until fully combined and smooth. The batter should be thick but pourable.
Baking

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.

Incorporate Mix-ins
Fold in the chocolate chips and walnuts (if using) into the brownie batter using a spatula.

Bake
Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
