Prepare the Tomatoes

Preheat the oven to 375°F (190°C). Toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 15-20 minutes or until they are soft and slightly caramelized.

Cook the Bacon

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside. Leave the bacon fat in the pot.

Sauté the Garlic

In the same pot, add the minced garlic to the bacon fat and sauté for 1-2 minutes until fragrant.

Cook the Mussels

Add the mussels to the pot and pour in the white wine. Cover the pot and steam the mussels for about 5-7 minutes or until they open. Discard any that do not open.

Combine Ingredients

Stir in the butter, crumbled bacon, and roasted tomatoes. Cook for an additional 2 minutes until everything is heated through.

Prepare the Garlic Bread

Slice the crusty bread and spread with butter and minced garlic. Toast in the oven until golden brown.
