    Caramelize the Onions

    Heat 1 tablespoon of olive oil in a pan over medium heat. Add thinly sliced onion and a pinch of salt. Cook slowly, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Cook the Bacon

    In the same pan, add bacon slices and cook until crispy. Remove from pan and place on a paper towel to drain excess grease.

    Grill the Turkey

    Season the turkey breast with salt and pepper. In the same pan, add another tablespoon of olive oil and grill the turkey breast over medium heat until fully cooked, about 5-7 minutes per side. Make sure the internal temperature reaches 165°F (75°C).

    Prepare the Avocado

    While the turkey is cooking, mash the avocado in a bowl and season with salt and pepper.

    Assemble the Melt

    Spread the mashed avocado on one slice of toasted sourdough. Layer with the cooked turkey, caramelized onions, crispy bacon, and top with cheddar cheese. Place the other slice of sourdough on top.

    Grill the Sandwich

    Return the sandwich to the pan, pressing down slightly, and grill until the cheese melts and the bread is golden brown, about 3-4 minutes per side.
