Prepare the Steak

Bread the Steak

In a shallow dish, mix together flour, salt, and pepper. In another dish, whisk together eggs and milk. Dip each steak first in the egg mixture, then coat with flour mixture. Set aside.

Fry the Steak

In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded steaks for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Sausage

In the same skillet, remove excess oil, leaving about 2 tablespoons. Add breakfast sausage and cook until browned, breaking it up as it cooks.

Sprinkle flour over the sausage and stir to combine. Gradually whisk in milk. Cook until thickened, stirring frequently. Season with salt and pepper.

Dice the potatoes into small cubes. Toss with olive oil, salt, pepper, and garlic powder.

In a separate skillet, cook the potatoes over medium heat for about 15-20 minutes until golden and crispy, stirring occasionally.

Fry the Eggs

In a small skillet, melt butter over medium heat. Crack eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.). Season with salt and pepper.

Assemble the Dish

Place the fried steak on a plate, top with sausage gravy, serve alongside breakfast potatoes, and top with cooked eggs.
