    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a pot, bring salted water to a boil and add the diced potatoes. Cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Heat the black beans in a small saucepan over medium heat, stirring occasionally. Season with salt and pepper to taste. Keep warm.

    Fry the Tortillas

    In a separate pan, heat oil over medium-high heat. Fry the corn tortillas for about 1-2 minutes on each side until crispy (for crunchy option) or warm them without frying (for old school option). Set aside.

    Cook the Eggs

    In the same pan, crack the eggs and cook them to your desired doneness (sunny-side-up, over-easy, etc.). Season with salt and pepper.

    Assemble the Dish

    On a plate, layer the cooked potatoes and black beans. Place the fried or soft tortillas on top. Add the cooked eggs, then sprinkle with shredded cheddar cheese. Top with avocado slices and jalapeño salsa. Finally, add the chili of your choice over the top.
