Make the Sausage Gravy
In a saucepan, cook the country sausage over medium heat until browned. Remove the sausage and drain excess fat, leaving about 1 tablespoon in the pan. Add butter and melt. Stir in flour and cook for about 1 minute. Gradually whisk in milk, stirring constantly until thickened. Add cooked sausage back into the gravy, season with salt and pepper, and keep warm.

Prepare the Eggs in a Hole
Use a round cookie cutter or a glass to cut a hole in the center of each slice of challah bread. In a non-stick skillet, melt a little butter over medium heat. Place the bread slices in the skillet and crack 2 eggs into each hole. Cook until the eggs are set to your liking, about 3-5 minutes.
