    Prepare the Ingredients

    Chop the onions, mince the garlic, and dice the potatoes. Cut the corned beef into small cubes.

    Cook the Potatoes

    In a large skillet over medium heat, add olive oil. Once hot, add the diced potatoes and cook until golden brown and tender, about 10-15 minutes. Stir occasionally.

    Add Onions and Garlic

    Add the chopped onions and minced garlic to the skillet. Cook until the onions are translucent, about 5 minutes.

    Add Corned Beef and Guinness

    Stir in the cubed corned beef and pour in the Guinness. Season with salt and black pepper. Cook for another 10 minutes, allowing the mixture to simmer and the flavors to meld.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (fried, poached, scrambled, etc.).
