    Prepare the Potatoes

    Dice the potatoes and toss them with olive oil, garlic powder, and paprika. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25 minutes or until golden and crispy.

    Make the Omelet

    In a bowl, whisk the eggs with salt and black pepper. Heat a non-stick skillet over medium heat and add a little oil or butter. Pour the egg mixture into the skillet. Cook for 2-3 minutes until the edges start to set.

    Add Cheese

    Sprinkle shredded cheddar cheese over one half of the omelet. Fold the other half over the cheese and cook for an additional 1-2 minutes until the cheese is melted and the omelet is cooked through.

    Toast the Bread

    While the omelet is cooking, toast your choice of bread slices to your liking.
