    Prepare the Pulled Pork

    In a slow cooker, combine the pork shoulder, soy sauce, brown sugar, garlic, and ginger. Cook on low for 8 hours or until the pork is tender and easily shredded.

    Pickle the Vegetables

    In a bowl, combine the rice vinegar, jicama, and carrots. Let them marinate for at least 30 minutes.

    Toast the Baguette

    Preheat the oven to 350°F (175°C). Slice the baguette in half and place it in the oven for 5-7 minutes until it is crispy.

    Assemble the Banh Mi

    Spread a generous amount of Asian barbeque sauce on the toasted baguette. Layer the pulled pork, pickled jicama and carrots, cilantro, and sliced jalapeño.

    Serve

    Cut the sandwich in half and serve with your choice of side.
