Salad Ingredients

Method

Salad Preparation

  1. 1

    Prepare the Kale

Wash the kale thoroughly under running water. Remove the tough stems and tear the leaves into bite-sized pieces.

  2. 2

    Shred the Carrots

Peel the carrots and shred them using a grater or a food processor.

  3. 3

    Slice the Cabbage

Thinly slice the red cabbage into strips.

  4. 4

    Chop the Green Onions

Slice the green onions, including both the white and green parts.

  5. 5

    Chop the Parsley

    Finely chop the fresh parsley.

  6. 6

    Combine the Salad Ingredients

In a large mixing bowl, combine the kale, shredded carrots, sliced red cabbage, chopped green onions, and parsley. Toss to mix well.

BBQ Sauce Preparation

  1. 7

    Combine Sauce Ingredients

In a medium saucepan, combine the apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, black pepper, and olive oil.

  2. 8

    Cook the Sauce

Heat the saucepan over medium heat, stirring occasionally until the mixture comes to a simmer.

  3. 9

    Simmer the Sauce

Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally until it thickens slightly.

  4. 10

    Cool the Sauce

Remove the sauce from heat and let it cool for a few minutes before using.

Final Assembly

  1. 11

    Dress the Salad

Drizzle the cooled apple cider BBQ sauce over the kale salad mixture.

  2. 12

    Toss and Serve

Gently toss the salad to ensure everything is evenly coated with the BBQ sauce. Serve immediately or refrigerate for 30 minutes to let the flavors meld.
