Filet Mignon

Seasonal Vegetables

Method

Preparing the Filet Mignon

  1. 1

    Season the Steaks

Pat the filet mignon steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

  2. 2

    Sear the Steaks

In a large skillet over medium-high heat, add the seasoned filet mignon steaks. Sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

  3. 3

    Add Aromatics

In the last minute of cooking, add crushed garlic and rosemary to the skillet, basting the steaks with the pan juices.

  4. 4

    Rest the Steaks

Remove the filet mignon from the skillet and let them rest for about 5 minutes before serving.

Cooking the Seasonal Vegetables

  1. 5

    Prepare the Vegetables

Trim the asparagus and peel the carrots. Cut the carrots into thin strips or rounds.

  2. 6

    Sauté the Vegetables

In a separate skillet, heat olive oil over medium heat. Add the asparagus and carrots, seasoning with salt and black pepper. Sauté for about 5-7 minutes until tender but still crisp.

  3. 7

    Serve Together

Plate the rested filet mignon alongside the sautéed seasonal vegetables for a complete meal.
