    Activate yeast & combine

    In a small bowl, stir warm water (about 105–110°F / 40–43°C) with sugar and sprinkle yeast over the top. Let sit 5–8 minutes until foamy. In a large bowl, combine flour and salt. Make a well and add foamy yeast mixture and 1 tablespoon olive oil.

    Knead & rise

    Mix until a shaggy dough forms, then turn onto a lightly floured surface and knead 6–8 minutes until smooth and elastic (or use a stand mixer with dough hook on medium for 4–5 minutes). Form into a ball, coat lightly with oil, place in a bowl, cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 60–75 minutes.

    Shape flatbreads

    After rising, punch dough down and divide into 2 equal portions for two 8–9 inch flatbreads (or keep whole for one large). Let rest 10 minutes, then roll or stretch each portion into a roughly 8–9 inch oval or round, about 1/4 inch thick. Place on parchment-lined baking sheet or a floured peel if using a pizza stone.

Topping — mushrooms & aromatics

    Sauté mushrooms

    While dough is resting, heat 1 tablespoon butter and 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add sliced mushrooms in a single layer (work in batches if necessary), let them brown undisturbed 2–3 minutes, then stir. Continue cooking until mushrooms are golden and any liquid has evaporated, about 6–8 minutes total.

    Finish mushrooms

    Lower heat to medium, add minced garlic and fresh thyme; cook 30–45 seconds until fragrant. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Remove from heat and set aside to cool slightly.

Assemble & Bake

    Preheat oven

    Position oven rack in upper third and preheat oven to 500°F (260°C). If using a pizza stone, preheat stone in oven; otherwise use a rimless sheet or baking sheet turned upside down.

    Top flatbreads

    Brush each stretched dough lightly with 1/2 teaspoon olive oil. Distribute sautéed mushrooms evenly over the two flatbreads, leaving a 1/2 inch border. Arrange thin slices of Taleggio over the mushrooms in an even layer (the cheese will melt and become creamy).

    Bake

    Bake one sheet or stone at a time for 7–10 minutes, or until crust is golden and cheese is melted and slightly bubbling. If using very high heat, watch closely — total bake time may be 5–8 minutes.

Finish & Serve

    Dress arugula

    While flatbreads bake, toss arugula with 1 teaspoon extra-virgin olive oil, 1 teaspoon lemon juice and a pinch of salt and red pepper flakes (optional). This lightly dresses the greens so they wilt just slightly on the hot flatbread.

    Final assembly

    Remove flatbreads from oven and immediately drizzle each with about 3/4 tablespoon (total 1.5 tbsp across both) mild honey in a thin even stream. Lightly drizzle each with 1/4 teaspoon white truffle oil (total 1/2 tsp). Top with a handful of dressed arugula distributed between the flatbreads.

    Slice & serve

    Let rest 1–2 minutes so cheese sets slightly, then slice into 4 pieces per flatbread and serve warm. Optionally finish with an extra pinch of flaky sea salt or a few more drops of truffle oil to taste.
