Pistachio Crust

Preheat and prepare pan
Preheat oven to 325°F (165°C). Line a standard 12-cup mini muffin tin or silicone mold with paper liners or lightly grease each cavity.

Toast pistachios: Spread 1 cup shelled pistachios on a baking sheet and toast in the oven 5–6 minutes until fragrant. Let cool slightly.

Make crust crumbs: In a food processor, pulse the toasted pistachios and 1/2 cup graham cracker crumbs until finely ground but not paste-like. Add 2 tablespoons granulated sugar and 1/4 teaspoon kosher salt; pulse to combine.

Bind crust: With the processor running briefly, pour in 3 tablespoons melted butter until mixture holds together when pressed. If needed add an extra 1/2 tablespoon butter.

Form crusts: Press about 1 to 1 1/2 teaspoons of crust mixture into the bottom of each mini muffin cup to form an even compact layer. Use the bottom of a small measuring spoon or bottle to press firmly.

Bake crusts: Bake in the preheated oven 6–8 minutes until set and slightly golden. Remove and let cool while you prepare the filling. Reduce oven temperature to 300°F (150°C).
Key Lime Cheesecake Filling

Soften and measure: Ensure 12 oz cream cheese and 1 egg are at room temperature for a smooth batter.

Beat cream cheese: In a medium bowl or stand mixer fitted with a paddle attachment, beat the room-temperature cream cheese and 1/2 cup granulated sugar on medium speed until smooth and creamy, about 1–2 minutes, scraping the bowl once.

Add sour cream and flavorings: Beat in 1/4 cup sour cream, 2 tablespoons key lime juice, 1 tablespoon key lime zest, 1/2 teaspoon vanilla extract, and 1 tablespoon powdered sugar (if using) until combined and smooth.

Finish with cream: Stir in 2 tablespoons heavy cream by hand to loosen the batter slightly for easy piping; the batter should be thick but pourable.

Fill crusts: Transfer batter to a piping bag or spoon. Pipe or spoon about 1 tablespoon of filling into each prepared crust, filling almost to the top but leaving a small rim for expansion.

Bake bites: Place the mini muffin tin on a baking sheet and bake at 300°F (150°C) for 12–15 minutes, or until centers are just set (they should still have a slight jiggle).

Cool and chill: Remove from oven and let cheesecakes cool to room temperature in the tin for 30 minutes. Then refrigerate at least 2 hours, ideally 3–4 hours, or overnight to fully set before adding the cherry drizzle.
Cherry Drizzle & Garnish

Prepare cherries: In a small saucepan combine 1 cup pitted cherries, 2 tablespoons granulated sugar, 1 teaspoon lemon juice, and 2 tablespoons water. Stir to combine.

Cook cherries: Bring mixture to a simmer over medium heat and cook 4–6 minutes until cherries begin to break down and release juices.

Thicken: In a small bowl, dissolve 1/2 teaspoon cornstarch in 1 tablespoon cold water. Stir slurry into the simmering cherries and cook 1 minute until sauce thickens slightly. Taste and adjust sweetness with a touch more sugar if desired.

Cool drizzle: Remove pan from heat and let cherry drizzle cool to room temperature; it will thicken more as it cools. For a smoother drizzle, press mixture through a fine-mesh sieve to remove skins and pulp, or leave slightly chunky if preferred.

Garnish cheesecakes: When cheesecake bites are chilled, spoon about 1/2 to 1 teaspoon of cherry drizzle onto each bite. Sprinkle a pinch of toasted chopped pistachios and a little lime zest on top of each for color and texture.

Serve or store: Serve immediately or refrigerate in an airtight container up to 3 days. If stored, add pistachio garnish just before serving to keep it crisp.
