    Place the 2 cups of finely crumbled carrot cake crumbs in a mixing bowl. Add the melted butter and 1 tablespoon brown sugar. Mix with a spatula until the crumbs are evenly moistened and hold together when pressed between your fingers.

    Line a baking sheet or tray with parchment. Using a tablespoon or small cookie scoop, press about 1 tablespoon of the crumb mixture into compact rounds (roughly 1-inch thick) to form the base for each bite. You should get about 18–22 small rounds depending on exact size. Chill the rounds in the refrigerator for at least 15 minutes to set while you prepare the mousses.

    If using gelatin for a firmer mousse, sprinkle 1 tsp gelatin over 1 tsp cold water in a small bowl and let bloom for 5 minutes. Microwave the bloomed gelatin for 5–8 seconds until just melted; set aside.

    In a medium bowl, combine 3 tablespoons cookie butter and 2 tablespoons powdered sugar. Stir until smooth.

    In a chilled mixing bowl, whip 1 cup cold heavy cream with an electric mixer at medium-high speed until soft peaks form (about 2–3 minutes).

    Fold one-third of the whipped cream into the cookie butter mixture to lighten it, then gently fold in the remaining whipped cream until fully incorporated and smooth. If using gelatin, whisk the melted gelatin briefly into a teaspoon of the mousse to temper, then fold it into the rest of the mousse quickly but gently to combine.

    Transfer the cookie butter mousse to a piping bag fitted with a medium round tip (or use a zip-top bag with the corner snipped). Return to the refrigerator until assembly.

Cream cheese mousse

    Prepare gelatin (optional for stability)

    If using gelatin for this mousse, sprinkle 1 tsp gelatin over 1 tsp cold water and bloom for 5 minutes, then microwave 5–8 seconds until melted; set aside.

    In a medium bowl, beat 6 oz softened cream cheese with 3 tablespoons powdered sugar and 1 teaspoon vanilla until smooth and no lumps remain (about 1–2 minutes).

    In a chilled bowl, whip 3 tablespoons cold heavy cream to medium peaks (it will be thicker but less volume than standard whipped cream).

    Fold the whipped cream into the sweetened cream cheese in two additions until homogeneous. If using gelatin, temper the melted gelatin into a tablespoon of the cream cheese mixture, then fold into the rest quickly but gently.

    Spoon or pipe the cream cheese mousse into a separate piping bag and chill briefly until assembly; it should be slightly firmer than the cookie butter mousse to hold the top layer.

Spiced pecans

    In a small skillet over medium-low heat, melt 1 teaspoon unsalted butter. Add 3/4 cup pecan halves, 1 teaspoon brown sugar, 1/2 teaspoon ground cinnamon, a pinch (1/8 tsp) ground nutmeg and 1/8 tsp salt. Toss to coat and toast for 3–4 minutes until fragrant and glossy, stirring often so they don’t burn.

    Transfer the pecans to a plate to cool. Once cool, chop roughly into small pieces for garnish (reserve a few halves for topping whole bites).

    Make the glaze: in a small microwave-safe bowl, combine 4 tablespoons cookie butter with 1 teaspoon neutral oil (or light corn syrup). Microwave in 10-second bursts, stirring between, until pourable but not hot (add 1 tsp milk or cream if glaze feels too thick). The goal is a smooth, slightly runny glaze that will drizzle.

    Assembly: remove the chilled crumb rounds from the refrigerator. Pipe or spoon about 1 to 1 1/2 teaspoons of cookie butter mousse onto each crumb round, smoothing into a shallow dome that covers the crumb base.

    Pipe a smaller dollop (about 3/4 teaspoon) of cream cheese mousse on top of the cookie butter mousse, creating a two-layered stack. Gently tap the tray on the counter to settle the mousses and remove air pockets.

    Using a spoon, drizzle about 1/2 teaspoon cookie butter glaze over each bite. Alternatively, dip the top lightly into the glaze for more coverage. If desired, sprinkle a few chopped spiced pecans on top and add a small drizzle (about 1/4 tsp) of caramel sauce. Finish with a tiny pinch of coarse sea salt on a portion of the bites (optional).

    Chill the assembled bites in the refrigerator for at least 30 minutes to allow mousses and glaze to set. For best texture, chill 1–2 hours.

    Serve chilled. Store leftovers in an airtight container in the refrigerator for up to 3 days (if gelatin used, structure will hold better).

Caramel drizzle (final garnish)

    If using thicker caramel, warm slightly to pourable consistency. Using a small spoon, drizzle about 1/4 tsp caramel over each bite just before serving for a glossy finish. Reserve any extra caramel refrigerated for another use.
