Method

Hummus

  1. 1

    Prepare chickpeas

If using canned chickpeas, drain in a colander and rinse under cold water until liquid runs clear. For slightly creamier hummus, optionally remove a few skins by pinching individual chickpeas between fingers—this is optional but improves texture.

  2. 2

    Blend base

In a food processor, combine the rinsed chickpeas, tahini, lemon juice, garlic clove, ground cumin, and kosher salt. Pulse several times to begin breaking down the beans.

  3. 3

    Emulsify

With the food processor running, slowly stream in the 2 tablespoons of olive oil. Add cold water, a tablespoon at a time, and continue processing until the mixture is very smooth and spreadable. Total processing time 2–4 minutes depending on motor. Stop and scrape down the bowl once or twice.

  4. 4

    Adjust seasoning & consistency

Taste and add more salt, lemon juice, or cumin as desired. If hummus seems too thick, add up to 1–2 more tablespoons of cold water or olive oil to reach desired creaminess.

  5. 5

    Plate & garnish

Spoon hummus into a shallow serving bowl, use the back of a spoon to create a shallow well in the center. Drizzle about 1 teaspoon olive oil over the top, sprinkle with smoked paprika and chopped parsley.

Pita Bites

  1. 6

    Prepare pita

Preheat oven to 400°F (200°C). If using whole pita rounds, cut each into 6–8 wedges. If using small pre-cut pita rounds, leave whole or halve depending on size.

  2. 7

    Oil & season

In a large bowl, toss pita wedges with 1 tablespoon olive oil, 1/4 teaspoon salt, and the optional 1/2 teaspoon za'atar or oregano until evenly coated.

  3. 8

    Bake until crisp

Spread the pita pieces in a single layer on a baking sheet lined with parchment. Bake in the preheated oven for 8–12 minutes, flipping once halfway, until golden and crisp. Watch closely to avoid burning. For extra-crispy bites, bake up to 14 minutes.

  4. 9

    Cool

Remove from oven and let pita bites cool on the baking sheet for 3–5 minutes. They will crisp further as they cool.

  5. 10

    Serve

Serve warm or room temperature pita bites alongside the hummus. Use pita to scoop hummus, or spread hummus on individual bites and garnish with additional parsley or paprika if desired.
