Method

Sushi Rice

  1. 1

    Rinse rice

Place 2 cups short-grain sushi rice in a fine-mesh sieve or bowl. Rinse under cold running water, stirring with your hand, until the water runs nearly clear (about 6–8 rinses). This removes excess starch.

  2. 2

    Soak and cook

Combine the rinsed rice and 2.25 cups water in a rice cooker or saucepan. If using a rice cooker, cook according to the manufacturer's instructions. If using a saucepan, bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let steam, covered, for 10 minutes.

  3. 3

    Prepare sushi vinegar

While the rice cooks, combine 4 tablespoons rice vinegar, 2 tablespoons sugar, and 1 teaspoon fine sea salt in a small bowl. Stir until the sugar and salt dissolve.

  4. 4

    Season rice

Transfer the hot cooked rice to a wide, shallow bowl or hangiri if available. Drizzle the sushi vinegar evenly over the rice. Using a wooden spoon or rice paddle, gently fold and fan the rice to cool it quickly while mixing — avoid mashing. If desired, lightly stir in 1/2 teaspoon toasted sesame oil for extra aroma. Rice should be slightly warm and sticky. Cover with a damp cloth until ready to assemble.

Prepare fillings

  1. 5

Shred or slice crab: If using imitation crab sticks, pull them into thin strips or slice lengthwise into long pieces. If using cooked crab meat, flake into bite-sized pieces. Mix the crab with 2 tablespoons mayonnaise in a bowl if you prefer a slightly creamy filling. Taste and adjust mayo to preference.

  2. 6

Cut avocado: Halve and pit the avocado. Peel and slice each half lengthwise into 4–6 thin strips. To prevent browning, you can toss slices lightly with a few drops of lemon juice, but keep amounts minimal so flavor remains.

  3. 7

Prepare cucumber: Cut the cucumber in half lengthwise, scoop out seeds with a spoon if large, then slice each half into long thin matchsticks approximately the same length as the nori sheet (about 6–7 inches). Pat dry to remove excess moisture.

Assemble rolls

  1. 8

Prepare work surface: Lay the bamboo mat on a work surface and place a sheet of plastic wrap over it (this keeps rice from sticking to the mat). Have a bowl of water nearby to wet your fingers (prevents rice from sticking). Place a sheet of nori shiny-side down on the plastic-covered mat.

  2. 9

Spread rice on nori (inside-out roll): Wet your fingers and take about 3/4 to 1 cup of sushi rice. Spread the rice evenly over the entire surface of the nori in a thin layer (about 1/4 inch thick). Gently press to adhere. Sprinkle 1 tablespoon toasted sesame seeds evenly over the rice. Carefully flip the nori and rice so the rice side is down on the plastic and the nori side is facing up.

  3. 10

Add fillings: On the side of the nori closest to you (the side that will become the inside of the roll), place a line of the crab mixture (about 2 pieces worth or a 3–4 tbs line), then a line of cucumber matchsticks and avocado slices. Keep fillings centered and leave about 1/2 inch of nori clear at the far edge to seal.

  4. 11

Roll tightly: Lift the bamboo mat edge nearest you and begin to roll away from you, tucking the fillings and nori under as you roll. Use the mat to gently compress the roll, shaping it into a firm cylinder. Seal the edge of the nori with a little water if needed.

  5. 12

Repeat: Repeat the process with the remaining nori sheets, rice, and fillings to make a total of 4 rolls.

Finish & serve

  1. 13

Cut the rolls: With a very sharp knife, wet the blade, then slice each roll into 6–8 even pieces. Clean and re-wet the knife between cuts for clean slices. For neat presentation, wipe the blade with a damp cloth between cuts.

  2. 14

Plate and garnish: Arrange California roll pieces on a serving plate. Garnish with additional toasted sesame seeds if desired. Serve with pickled ginger, wasabi, and soy sauce (or tamari) for dipping.

  3. 15

Storage: Consume fresh within a few hours for best texture. If storing, cover tightly and refrigerate up to 24 hours; note rice will firm and texture will change.
