Kombucha Brewing Directions

    Prepare the Tea

    Boil the water and add the tea. Steep for about 15 minutes, then remove the tea leaves or bags.

    Dissolve Sugar

    While the tea is still warm, stir in the sugar until fully dissolved. Allow the sweetened tea to cool to room temperature.

    Combine with Starter Kombucha

    Once cooled, pour the sweetened tea into a large glass jar and add 1 cup of previously brewed kombucha (if available) to help start the fermentation process.

    Add SCOBY

    Gently place the SCOBY into the jar. Cover the jar with a clean cloth and secure it with a rubber band.

    Ferment

    Let the kombucha ferment in a warm, dark place for 7 to 14 days, depending on your taste preference. Check periodically for sweetness.

    Prepare Flavoring

    Once fermentation is complete, blend the peach and mango to create purees.

    Second Fermentation

    Pour the kombucha into bottles, leaving some space at the top. Add 2 tablespoons of sugar and equal parts peach and mango puree to each bottle. Seal tightly.

    Final Fermentation

    Allow the bottled kombucha to ferment for an additional 3 to 7 days at room temperature. Check daily for fizziness.

    Refrigerate and Enjoy

    Once the desired fizziness is reached, refrigerate the bottles to stop fermentation. Serve chilled.
