Prepare the Cauliflower

Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets with olive oil, turmeric powder, cumin powder, salt, and black pepper until well coated.

Roast the Cauliflower

Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the cauliflower is tender and golden brown, flipping halfway through.

Prepare the Chutney

While the cauliflower is roasting, prepare the coriander chutney. Blend fresh coriander, green chilies, lemon juice, salt, and a splash of water until smooth. Adjust seasoning to taste.

Make Masala Honey

In a small bowl, mix honey with a pinch of turmeric and a pinch of cumin. Adjust the spices to taste.

Serve

Once the cauliflower is done roasting, remove it from the oven. Serve it on a platter with hydro greens, drizzled with coriander chutney and masala honey, and topped with golden raisins.
