Prepare the Grits

In a medium saucepan, bring 4 cups of water to a boil. Add the grits and a pinch of salt. Reduce heat to low, cover, and simmer for about 20 minutes, stirring occasionally until thickened. Stir in the cheddar cheese until melted and creamy. Set aside.

Cook the Sausage

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

Sear the Shrimp

In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for 1 minute. Add the shrimp, Cajun seasoning, salt, and black pepper. Cook until the shrimp turn pink and are cooked through, about 3-4 minutes. Return the sausage to the skillet and toss to combine.

Make the Cajun Thyme Cream

In a small saucepan, combine heavy cream and chopped thyme. Simmer on low heat for about 5 minutes to infuse the flavors. Season with salt and pepper to taste.
