Prepare the Potatoes
Wash and peel the Russet potatoes, then cut them into thin strips to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Dry the Fries
Drain the fries and pat them dry with a clean kitchen towel.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried fries to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

Once fried, remove the fries with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt.
