Prepare the Brussels Sprouts

Preheat the oven to 400°F (200°C). Trim and halve the Brussels sprouts, then toss them with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until golden brown and tender.

Cook the Bacon

While the Brussels sprouts are roasting, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on a paper towel. Once cooled, crumble the bacon into small pieces.

Crispy Chickpeas

Drain and rinse the chickpeas. Pat them dry with a paper towel. Toss with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast in the oven for 20-25 minutes until crispy.

In a large bowl, combine the baby kale, roasted Brussels sprouts, crumbled bacon, crispy chickpeas, and sliced red onion. Drizzle with Caesar dressing and toss to combine. Top with grated Parmesan cheese before serving.
