    Prepare the Ingredients

    Start by cleaning the mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Discard any mussels that are open and do not close when tapped. Slice the bacon into small pieces and chop the leeks, garlic, and parsley.

    Cook the Bacon

    In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

    Sauté the Vegetables

    In the same skillet with the bacon fat, add the leeks and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Add the Mussels

    Increase the heat to high and add the cleaned mussels to the skillet. Pour in the champagne and cover the skillet. Cook for about 5-7 minutes, or until the mussels have opened.

    Make the Cream Sauce

    Once the mussels are opened, remove the cover and add the heavy cream. Stir in the cooked bacon, parsley, salt, and black pepper. Cook for another 2-3 minutes until the sauce is slightly thickened.

    Remove the skillet from heat. Serve the mussels in bowls with the champagne cream sauce, accompanied by grilled bread for dipping.
