Cooking Instructions

  1. 1

    Prepare the Bronzini

Preheat the grill to medium-high heat. Clean the bronzini and make diagonal cuts on both sides. Rub olive oil, salt, and black pepper over the fish. Squeeze lemon juice over the fish and place lemon slices inside the cavity.

  2. 2

    Grill the Fish

Place the bronzini on the grill and cook for about 6-8 minutes on each side, or until the flesh is opaque and flakes easily with a fork.

  3. 3

    Prepare the Green Beans

Blanch green beans in boiling salted water for 3-4 minutes until vibrant green and tender-crisp. Drain and shock them in ice water to stop cooking.

  4. 4

    Sauté the Almonds

In a small skillet, toast the almonds over medium heat until golden brown, about 5 minutes. Remove from heat and set aside.

  5. 5

    Make the Caper Raisin Butter

In a small saucepan, melt ½ cup of butter over low heat. Add capers, raisins, and a pinch of salt. Stir until combined and warmed through.

  6. 6

    Serve

Plate the grilled bronzini with a side of whipped potatoes and green beans topped with toasted almonds. Drizzle caper raisin butter over the fish and serve immediately.
