    Prepare the Ginger Base

    Peel and finely grate the fresh ginger root. In a medium saucepan, combine the grated ginger, sugar, and 4 cups of water. Bring the mixture to a boil over medium heat, stirring until the sugar completely dissolves.

    Cool the Mixture

    Once boiling, remove the saucepan from heat and allow the ginger-sugar mixture to cool to room temperature.

    Add Yeast and Lemon Juice

    Once cooled, stir in the fresh lemon juice and the active dry yeast. Mix well to combine.

    Fermentation

    Pour the mixture into a clean, sanitized glass or plastic container with an airlock. Allow the mixture to ferment at room temperature for 24 to 48 hours, until it becomes slightly fizzy.

    Bottle the Ginger Beer

    After fermentation, strain the mixture into bottles, leaving a little headspace at the top. Add carbonated water to each bottle to achieve desired fizziness.

    Seal the bottles and refrigerate. Serve chilled over ice, garnished with a lemon slice if desired.
