Ginger Beer Preparation

    Prepare the Ginger

    Peel and finely grate the fresh ginger root.

    Make the Ginger Syrup

    In a saucepan, combine the grated ginger, sugar, and 2 cups of water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves. Once boiling, remove from heat and let it steep for about 30 minutes.

    Strain the Ginger Syrup

    After steeping, strain the ginger syrup through a fine mesh sieve into a large mixing bowl or pitcher, discarding the solids.

    Combine Ingredients

    Add the remaining 2 cups of water, fresh lemon juice, and active dry yeast to the ginger syrup. Stir gently to combine.

    Ferment the Mixture

    Cover the bowl or pitcher with a clean cloth and let it sit at room temperature for 24 to 48 hours, depending on desired fizziness. Stir gently every 12 hours.

    Bottle the Ginger Beer

    After fermentation, pour the ginger beer into clean bottles, leaving some space at the top. Seal the bottles tightly.
