For the Croissant Dough

Method

Making Croissants

  1. 1

    Prepare the Dough

In a bowl, mix the flour, salt, sugar, and yeast. Heat the milk until warm (not hot) and add to the dry ingredients along with melted butter and water. Mix until a dough forms.

  2. 2

    Knead the Dough

Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.

  3. 3

    Prepare the Butter Block

While the dough is rising, shape the 1.5 cups of cold butter into a flat rectangle between two sheets of parchment paper. Chill in the refrigerator.

  4. 4

    Laminate the Dough

After the dough has risen, roll it out into a rectangle on a floured surface. Place the chilled butter block in the center and fold the dough over the butter. Roll out again and fold into thirds. Repeat this process two more times.

  5. 5

    Cut and Shape the Croissants

After the final fold, roll the dough to a 1/4 inch thickness. Cut triangles and roll them up from the base to the tip. Place on baking sheets lined with parchment paper.

  6. 6

    Final Rise

Cover the shaped croissants and let them rise for about 1 hour until doubled in size.

  7. 7

    Bake

Preheat the oven to 375°F (190°C). Bake the croissants for 15-20 minutes or until golden brown. Let cool before serving.
