Method

Preparing the Lamb Chops

    Rub the Lamb Chops

    In a small bowl, mix together espresso powder, brown sugar, smoked paprika, garlic powder, salt, and black pepper. Rub the mixture evenly over the lamb chops. Drizzle with olive oil and let marinate for at least 30 minutes.

    Grill the Lamb Chops

    Preheat your grill to medium-high heat. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from grill and let rest.

Making the Apricot Limoncello Jam

    In a saucepan, combine dried apricots and water. Bring to a boil, then reduce heat and simmer until apricots are soft, about 10 minutes.

    Add sugar, limoncello, and lemon juice to the apricot mixture. Cook over medium heat, stirring frequently, until the mixture thickens, about 15 minutes. Remove from heat and let cool.

Preparing the Candied Pecans
