Prepare the Dough
In a bowl, combine warm water, yeast, and brown sugar. Let sit for about 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture and mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl and cover it with a damp cloth. Let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bagels
Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then poke a hole in the center with your finger to form a bagel shape. Stretch the hole to about 2 inches in diameter.

Boil the Bagels
In a large pot, bring water to a boil and add baking soda. Carefully drop bagels into the boiling water, cooking for 1-2 minutes on each side. Remove with a slotted spoon and let drain.

Bake the Bagels
Preheat the oven to 425°F (220°C). Place boiled bagels on a baking sheet lined with parchment paper. Brush each bagel with egg wash and sprinkle with toppings as desired. Bake for 20-25 minutes or until golden brown.

Remove the bagels from the oven and let cool on a wire rack. Enjoy fresh or toasted with your favorite spreads!
