Prepare Tartar Sauce

    Make the Tartar Sauce

    In a bowl, mix together the mayonnaise, dill pickle relish, lemon juice, capers, and chopped parsley. Stir until well combined. Set aside in the refrigerator to chill.

Prepare Oysters

    Prepare the Oysters

    Shuck the Fanny Bay oysters and place them on a plate. Pat them dry with a paper towel to remove excess moisture.

    Coat the Oysters

    In a shallow dish, mix the flour, cornmeal, salt, and black pepper together. Dredge each oyster in the mixture, ensuring they are fully coated.

Fry Oysters

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pan Fry Oysters

    Carefully add the coated oysters to the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Drain Excess Oil

    Remove the fried oysters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

    Serve the pan-fried oysters immediately with a side of homemade tartar sauce and fresh lemon wedges for squeezing on top.
