    Prepare the Pork Rack

    Preheat your oven to 375°F (190°C). In a bowl, mix the maple syrup, Dijon mustard, garlic powder, salt, and black pepper. Rub this mixture all over the pork rack, ensuring it's well coated. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork rack on all sides until golden brown (about 4-5 minutes each side).

    Roast the Pork

    Transfer the skillet to the preheated oven and roast the pork for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

    Make the Poutine

    Cook the French fries according to package instructions or until crispy. In a bowl, layer the fries, followed by pulled pork, cheese curds, and top with hot gravy.

    Bring a pot of salted water to a boil. Add the green beans and cook for about 4-5 minutes until tender-crisp. Drain and toss with butter, salt, and black pepper to taste.

    In a saucepan, combine apple cider and brown sugar. Bring to a boil, then reduce heat and simmer until the mixture thickens and reduces by half, about 15-20 minutes. Season with salt to taste.
