Cooking the Beef

Prepare the Beef

Season the AAA beef sirloin with salt and black pepper on both sides.

Cook the Beef

Heat olive oil in a skillet over medium-high heat. Add the seasoned beef sirloin and cook for about 4-5 minutes on each side for medium-rare, or cook to your desired doneness.

Making Matchstick Fries

Prepare the Potatoes

Peel the russet potatoes and cut them into matchstick shapes.

Fry the Potatoes

Heat vegetable oil in a deep pan over medium heat. Fry the matchstick potatoes in batches until golden and crispy, about 3-5 minutes. Remove and drain on paper towels. Season with salt.

Cooking Seasonal Vegetables

Sauté the Vegetables

In a separate pan, heat olive oil over medium heat. Add sliced carrots and green beans, season with salt, and sauté for about 5-7 minutes or until tender.

Making Brandy Peppercorn Sauce

Prepare the Sauce

In the same skillet used for the beef, melt butter over medium heat. Add crushed black peppercorns and sauté for 1 minute. Pour in brandy and let it reduce for 2 minutes. Stir in heavy cream and simmer until thickened, about 3-5 minutes. Season with salt.
