Preparing the Grilled Shrimp

    Marinate the Shrimp

    In a bowl, combine the olive oil, minced garlic, lime juice, paprika, salt, and black pepper. Add the shrimp and toss to coat. Cover and let it marinate in the refrigerator for at least 15 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers. Grill for about 2-3 minutes on each side until the shrimp is pink and opaque. Remove from the grill and set aside.

Cooking the Rice

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Making the Tropical Salsa

    Combine Salsa Ingredients

    In a mixing bowl, combine the diced mango, pineapple, red bell pepper, red onion, and chopped cilantro. Drizzle with lime juice and sprinkle with salt. Toss gently to mix all the ingredients.

Assembling the Bowl

    Serve the Bowl

    In a serving bowl, place a generous scoop of the cooked jasmine rice. Top with grilled shrimp and a generous portion of tropical salsa. Serve immediately.
