Cooking the Rice

    Prepare the Jasmine Rice

    Rinse 1 cup of jasmine rice under cold water until the water runs clear. Combine the rice with 1 cup of coconut milk and 1 cup of water in a medium saucepan.

    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes until rice is tender and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Preparing the Chicken and Veggies

    In a large skillet, heat 1 tablespoon of oil over medium heat. Add the diced chicken breast and cook for 5-7 minutes until golden and cooked through. Remove from skillet and set aside.

    In the same skillet, add the sliced red and green bell peppers, and julienned carrots. Sauté for about 4-5 minutes until they are tender but still crisp.

Combining Ingredients

    Return the cooked chicken to the skillet with the vegetables. Stir in the soy sauce, fish sauce, red curry paste, lime juice, salt, and black pepper. Mix well to ensure everything is evenly coated.

    Fluff the cooked jasmine rice with a fork and gently fold it into the chicken and vegetable mixture until well combined.
