    Prepare the Oxtail

    Season the oxtail pieces with salt and black pepper, ensuring an even coating on all sides.

    Chop Vegetables

    Dice the onion, mince the garlic, and chop the carrots and celery into small pieces.

Cooking

    Sear the Oxtail

    In a large heavy pot, heat the vegetable oil over medium-high heat. Add the oxtail pieces and sear them for about 5-7 minutes on each side until browned. Remove the oxtail and set aside.

    Sauté Vegetables

    In the same pot, add the diced onion, minced garlic, chopped carrots, and chopped celery. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Tomato Paste

    Stir in the tomato paste and cook for an additional 2 minutes, allowing it to caramelize slightly.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 3 minutes.

    Combine Ingredients

    Return the seared oxtail to the pot. Add the beef broth, bay leaves, thyme, and Worcestershire sauce. Stir to combine.

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2-3 hours, or until the oxtail is tender and falling off the bone.
