Chicken Marinade

Marinate the Chicken

    Step 1: Prepare Marinade

    In a large bowl, combine jerk seasoning, minced garlic, lime juice, and olive oil. Mix well.

    Step 2: Marinate Chicken

    Add the chicken thighs to the marinade and ensure they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook Rice and Beans

    Step 3: Sauté Vegetables

    In a medium saucepan, heat a little olive oil over medium heat. Add chopped onion and bell pepper, and sauté for about 5 minutes until softened.

    Add the rice, water, and salt to the saucepan. Bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes or until the rice is tender and the water is absorbed.

    Stir in the rinsed black beans and let it simmer for an additional 5 minutes, allowing the flavors to meld.

Cook Chicken

    Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

Assemble the Bowl

    In a bowl, layer the rice and beans as the base, slice the grilled jerk chicken on top, and garnish with chopped cilantro and lime wedges.
