    Blend the Marinade

    In a blender or food processor, combine Scotch bonnet peppers, garlic cloves, fresh thyme leaves, ground allspice, ground cinnamon, brown sugar, soy sauce, lime juice, salt, and black pepper. Blend until smooth.

    Marinate the Chicken

    Place the chicken thighs in a large bowl or zip-top bag. Pour the blended marinade over the chicken, ensuring that all pieces are well coated. Seal the bag or cover the bowl with plastic wrap. Refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, approximately 400°F (200°C).

    Grill the Chicken

    Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken thighs skin-side down on the grill. Grill for about 6-8 minutes, then flip and grill for another 6-8 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

    Rest and Serve

    Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. Serve hot with your choice of sides.
