Marinate the Chicken
In a large bowl, combine chicken thighs, jerk seasoning, juice of the lime, and fresh thyme. Mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Chop the red and green bell peppers, onion, and garlic cloves. Set aside.

In a large skillet or pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sauté until fragrant and translucent, about 2-3 minutes. Then add the bell peppers and cook for another 5 minutes.
