    Marinate the Chicken

    In a large bowl, combine chicken thighs, jerk seasoning, juice of the lime, and fresh thyme. Mix well to coat the chicken evenly. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Vegetables

    Chop the red and green bell peppers, onion, and garlic cloves. Set aside.

    Sauté the Vegetables

    In a large skillet or pot, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, sauté until fragrant and translucent, about 2-3 minutes. Then add the bell peppers and cook for another 5 minutes.

    Add the marinated chicken thighs to the skillet with the sautéed vegetables. Cook for about 5 minutes on each side until browned.

    Pour the coconut milk into the skillet, stirring to combine. Bring to a simmer, then reduce heat to low and cover. Let it cook for 25-30 minutes until the chicken is cooked through and tender.
