Preparation

  1. 1

    Prepare the Vegetables

Thoroughly wash the callaloo leaves and spinach under cold water. Remove tough stems from the callaloo and chop the leaves coarsely. Chop the spinach as well. Dice the onion, garlic, tomato, and bell pepper. Set aside.

  2. 2

    Prepare the Scotch Bonnet

Slice the Scotch bonnet pepper in half, and remove seeds if you prefer less heat. Set aside.

Cooking

  1. 3

    Sauté the Aromatics

In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  2. 4

    Add the Vegetables

Stir in the chopped callaloo, spinach, and bell pepper. Cook for about 5-7 minutes until they wilt down.

  3. 5

    Add Liquids and Seasonings

Pour in the coconut milk and vegetable broth. Add salt, black pepper, thyme, and allspice. Stir well to combine.

  4. 6

    Simmer

Add the Scotch bonnet pepper to the pot. Bring the mixture to a gentle simmer. Cover and cook for 15-20 minutes, stirring occasionally until the vegetables are tender and flavors meld.

  5. 7

    Final Adjustments

Taste and adjust seasoning if necessary; remove the Scotch bonnet pepper to control the heat level. Serve hot.
